Tilapia with Braised Asparagus

Tilapia is a wonderful, non-oily, light and flaky fish. It is a medium sized non-carnivorous fish that eats algae and plants and filters microorganisms from its system through fine gills. Because of this it is low on the food chain and thus does not build up pollutants and contaminants in its system. Tradition says tilapia is the fish Jesus used to feed the five-thousand. Tilapia purchased in the grocery store is farm-raised, and as a fast-growing fish, it can attain market size in 8 to 10 months.



Ingredients: (recipe feeds two, double up for more)

2 tilapia filets, about equal in size
fresh asparagus, about a dozen or so stalks
1 to 2 tablespoons extra virgin olive oil
